Three Cheese Croutons with Sun-dried Tomatoes Mary & John
1 French bread baguette, cut into 1/4-inch slices
Extra virgin olive oil
1/4 pound California goat cheese with herbs
1/4 pound ricotta cheese
1/4 pound shredded mozzarella cheese
1 large garlic clove, minced
Pepper
18 sun dried tomatoes, drained and halved
Preheat oven to 300 degrees.
Arrange bread slices on baking sheet. Brush tops with olive oil. Bake until
croutons are golden brown, about 2 minutes. Remove from oven and set aside.
Increase oven temperature to 350 degrees.
Blend cheeses and garlic in a bowl. Season with pepper.
Mound one teaspoon of cheese mixture on each crouton. Top with tomato
half.
Cover with additional teaspoon of cheese mixture. Bake until cheese begins
to melt.
Serve immediately.
