Butternut Squash Casserole    Mom & Dad
2 & 1/2 pounds butternut squash (peeled, seeded, cut into 3/4-inch
cubes)
3 onions, sliced
2 tablespoons oil
2 apples, peeled, cored, and cut into 1/2-inch pieces
3 tablespoons flour
3/4 cup ham (or more), cut into 3/4-inch pieces
1 cup shredded Cheddar cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon grated nutmeg
1/3 cup seasoned bread crumbs
1/3 cup chopped parsley
2 tablespoons butter, cut into small pieces
Preheat the oven to 350 degrees.
Lightly grease 13x9x2-inch casserole.
Cook squash about 8 minutes until tender. Drain.
Saute onions in large saucepan until pale-golden.
Add apple and cook 4 minutes.
Stir in flour.
Add squash, ham, cheese, salt, pepper and nutmeg.
Pour into casserole. Top with breadcrumbs and parsley.
Bake, covered for 40 Minutes.
Uncover, dot with butter, and bake 10 minutes more, until brown.
