Thai Peanut Sauce      Noreen & Marion
Make this tasty sauce when you're lacking the time and ingredients to make
a real satay sauce from scratch. You can rely on it to make a simply
prepared tofu dish into a respectable dinner.
3 tablespoons Thai peanut paste
1 teaspoon Thai red chili paste
1 cup unsweetened coconut milk
1 scallion, including half of the greens, thinly sliced
Work the peanut and red chili pastes into the coconut milk until smooth,
then heat in a small saucepan until boiling. Turn off the heat and stir in the
scallions. Taste and increase the heat if you like by adding more chili paste.
Makes about 1 cup
