Sweet Potato Orange Cups     Anita & Warren
This can be made a couple days early and kept refrigerated. Reheat in
baking dish at 325 degrees for about 15 minutes, or in the microwave.
4 or 5 small to medium sweet potatoes or yams
3 navel oranges
1/4 stick butter
dash ground nutmeg
1 tablespoon brown sugar
salt and pepper
pecan or walnut meats, halved
Peel and boil sweet potatoes or yams until ready to mash.
Cut navel oranges in half Scoop out all pulp. Squeeze some to get about 1/2
cup, or more, of juice.
Add butter to sweet potatoes or yams and mash.
Mix with electric beater with juice until consistency is of soft mashed
potatoes.
Add a dash or two of ground nutmeg, brown sugar, salt and pepper.
Scoop into orange cups and top with pecan or walnut half.
