Sausage Strata       Tom & Kari
This is great to prepare during the busy holidays, especially if you have
overnight guests. Simply prepare the evening before and pop in the oven
the next morning!
6 eggs, beaten
1 & 3/4 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dry mustard
10 slices white bread, crusts removed and cubed
8 ounces grated sharp Cheddar cheese
8 ounces grated Swiss cheese
1 pound bulk breakfast sausage
1/2 small green bell pepper, finely chopped
1/2 small onion, finely chopped
Dash cayenne pepper (optional)
In a large skillet, cook sausage until crumbled and well done. Remove from
heat and add green pepper and onion. Set aside. Mix eggs with milk, salt,
pepper, dry mustard and cayenne pepper (if desired) and set aside. In a
buttered 13x9-inch baking dish, layer bread cubes over the bottom of the
pan. Sprinkle half of the cheeses over the bread. Add sausage mixture over
cheeses. Sprinkle remaining cheeses on top, and then pour the egg mixture
over all. Cover with foil and refrigerate overnight.
Preheat oven to 350 degrees. Bake for at least one hour. Check for done-
ness, because it may need more time. Cook until set in center. Let stand
for 5-10 minutes before serving.
