Pecan Puff Cookies     Tom & Kari
1/2 cup butter, softened (do not substitute)
2 tablespoons sugar
1 teaspoon vanilla extract
1 cup pecan meats, ground (measure first, then grind)
1 cup sifted cake flour (sift before measuring)
Confectioners' sugar
Beat butter until smooth. Add sugar and blend until creamy. Add vanilla;
mix well. Stir the pecans and the flour into the butter mixture. Roll the
dough into small balls. Place them on a greased baking sheet. Bake in a slow
oven, 300 degrees for about 35 minutes. Roll the puffs while hot in the
confectioners' sugar. When cooled, roll again in confectioner's sugar.
