Oriental Chicken and Pea Pods     Mary & John
1 10-ounce bottle lite soy sauce (or to cover chicken)
4 large chicken breast fillets (about 1/2 pound per person)
2 tablespoons peanut oil
1/2 pound snow peas
1 3-ounce can LaChoy rice noodles (or, if unavailable,
chow mein noodles)
1 head Chinese or Nappa cabbage
1 clove garlic, pressed
1 teaspoon lite soy sauce
1 teaspoon vinegar (flavored optional)
1 teaspoon olive oil
1 cup Hellman's mayonnaise
Parsley and Mandarin oranges or orange wedges, as garnish
Marinate chicken in soy sauce (to cover) not longer than 15 minutes. Saute
chicken in peanut oil until cooked. Cool and cut into thin strips. Wash and
steam snow peas until tender-crisp. Rinse immediately in cold water to stop
cooking and retain bright green color. Wash and coarsely shred cabbage. Mix
garlic, soy sauce, vinegar, oil and mayonnaise together. Toss chicken, snow
peas and cabbage with mayonnaise mixture. Chill. Mix rice noodles in just
before serving.
