New Potatoes and Herbed Shallot Butter  Tom & Kari
1 & 1/4 pounds small new potatoes
1 tablespoon butter
1/3 cup finely chopped shallots
2 cloves garlic, minced
1/2 teaspoon dried tarragon
1 teaspoon snipped chives
1 teaspoon chopped fresh parsley or 1/2 teaspoon dried parsley
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
Cook the potatoes, whole, in boiling water, covered, until just tender, about 15
minutes.
Melt the butter in a large skillet. Add the shallots and garlic and saute over
low heat until softened, about 5 minutes.
Add the cooked potatoes to the skillet and stir well.
Season with the tarragon, chives, parsley, salt and pepper and cook, stirring,
until the potatoes are heated through.
6 servings.
