Lithuanian Kugelis   Den & Donna
1 pound uncooked bacon, diced
2 large onions, grated
1/2 cup butter
5 lbs russet potatoes, peeled, shredded & drained to remove
moisture
1/2 cup evaporated milk
6 eggs
Cook bacon in large covered pot until bacon has softened and released its
grease. Remove cover, add onions and continue cooking and stirring until
bacon crisps and mixture caramelizes, turning a golden brown. Remove
from heat and stir in butter until melted.
Stir in shredded potatoes, milk and eggs. Mix thoroughly. Pour into 9x13
or larger baking dish or two smaller dishes. Bake uncovered at 350 to 400
degrees for about one hour or until top is golden.
Let rest for 10 minutes. Cut in squares to serve.
Serves 12.
Freezes well.
