Honey Whole-Wheat Bread      Den & Donna

First stage ingredients:
2 cups warm water (110 degrees)
2 (.25 ounce) packages active dry yeast
1/3 cup honey
3 & 1/3 cups white bread flour
Second stage ingredients:
1/3 cup honey
2 tablespoons unsalted butter, melted
2 teaspoons salt
2 & 1/3 cups whole-wheat flour
1 & 1/3 tablespoons (4 teaspoons) melted butter
In a large bowl, mix warm water, yeast and first batch of honey. Add 3 1/3
cups white bread flour and stir to combine. Let set for 30 minutes, or until

Mix in 2 tablespoons melted butter, second batch of honey and salt. Stir in
2 1/3 cups whole-wheat flour. Knead in mixer with dough hook for 8 - 9
minutes. Cover with a dishtowel & let rise in a warm place until doubled.
Punch down and divide into two loaves. Place in 2 9x5-inch loaf pans that
have been buttered or sprayed with Pam. Cover with towel again & allow to
rise until dough has topped the pans by 1 inch.
Preheat oven to 350 degrees. Bake bread for 30 minutes. Remove & lightly
brush the tops of the loaves with the remaining melted butter to prevent
crusts from getting hard. Remove from the pans after 5 or 10 minutes, then
cool completely on wire racks.
Honey-White Bread
Follow the same directions as for whole-wheat, just use white flour again in
the second step instead of whole-wheat flour.
A nice sweet bread.
