Cranberry-Orange Bread      Laurie & Steve
You can freeze bags of whole cranberries in the fall to have on hand for this
recipe. I've never tried dried cranberries, but I bet they would work too. You
can also add a cup of light raisins, if you like.
2 cups flour
1 cup sugar
1 & 1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup butter or margarine
1 egg, beaten
1 teaspoon grated orange peel
3/4 cup orange juice
1 & 1/2 cups fresh or frozen cranberries, chopped (measure first,
then chop)
1/2 cup chopped nuts
Sift flour, sugar, baking powder, salt, and baking soda into a large bowl. Cut
in butter until mixture is crumbly. Add egg, orange peel, and orange juice all
at once. Stir until mixture is evenly moist. Fold in cranberries, nuts and
optional raisins. Bake in a 350-degree oven for 70 minutes or until toothpick
inserted in middle comes out clean.
