Crabmeat Strata      Elaine & Craig
6 eggs, beaten
2 cups milk
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon dry mustard
dash red pepper
10 slices white or whole wheat bread, crusts removed & cubed
8 ounces sharp cheddar cheese, grated
1 pound lump crabmeat, rinsed in hot water & drained
¼ cup green bell pepper, diced
¼ cup onion, finely chopped
Make filling by mixing together crabmeat, green pepper & onions.
Set aside.
Mix eggs, milk, salt, pepper, dry mustard and red pepper & set aside.
Spray the bottom of a 9x12 casserole dish. Layer bread cubes over bottom
of the prepared pan. Sprinkle with half the cheeses, then cover with filling.
Sprinkle filling with remaining cheeses & pour the egg mixture over all.
Cover with foil & refrigerate overnight.
To cook, preheat oven to 350 degrees and bake for one hour. Let stand 5
to 10 minutes before serving.
