Clam Chowder       Mom & Dad
Min says this is delicious!
1 cup diced onions
1 cup diced celery
2 cups diced potatoes
3/4 cup butter or margarine
3/4 cup flour
1 quart half & half
2 6 & 1/2-ounce cans minced clams
1 bottle clam juice
2 tablespoons red wine vinegar
1 - 1/2 teaspoons salt
Dash of pepper
Put vegetables in saucepan. Pour clam juice over them. Add water to barely
cover. Simmer until tender.
Melt butter in large pot. Add flour and blend.
Add milk and stir with wire whip until thickened.
Add vegetables, clams, vinegar, salt and pepper.
