Blueberry Morning Cake Aka: Blueberry Buckle  Mary & John
1/4 cup margarine or butter, softened
3/4 cup granulated sugar
1 egg or 2 egg whites
2 cups flour
2 & 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup whole or skim milk
2 cups blueberries, washed & drained
Topping:
1/4 cup flour
1/3 cup brown sugar, firmly packed
3 tablespoons butter
½ teaspoon ground cinnamon
Preheat oven to 375 degrees. Grease an 8- or 9-inch pan. Sift together
flour, baking powder and salt. Set aside.
Cream together butter and sugar. Add egg and mix well. Alternately add
flour mixture and milk until all are mixed in the batter. Carefully fold in the
blueberries. Pour batter into prepared pan.
Topping:
Mix ingredients together with a fork or pastry blender. Sprinkle
over the batter. Bake for 45-50 minutes. Garnish with fresh strawberries,
if desired.
