Banana Bread      Paul & Paula
We like to make little 3x5-inch loaves for Christmas. These freeze very well.
3 large bananas
1 teaspoon baking soda
2 cups sugar (or less to taste)
1 cup oil
2 eggs
1 teaspoon vanilla
1/4 teaspoon salt
2 cups flour
Raisins or nuts (optional)
Mash bananas with baking soda. Set aside. In another bowl, mix sugar, oil,
eggs, vanilla, salt, flour, and raisins and nuts, if desired. Mix until well
blended and add the banana mixture. Pour into at least two small greased
and floured loaf pans. (All the batter in one pan never cooks through to the
center. I use three pans that are about 5x8-inches.)
Bake in a preheated 325-degree oven until a knife in the center comes out
clean (differs according to pan size).
Wrap loaves in plastic wrap while still warm, not hot, to keep them moist.
