Zucchini Bake Paul & Paula|
4 to 6 small zucchini
salt and pepper to taste
2 tablespoons butter or margarine (more if too dry)
1/2 package Ritz crackers
1/4 cup Parmesan cheese
Slice and boil zucchini until tender.
Drain and place in casserole dish.
Mix in butter or margarine, crush in Ritz crackers and mix in Parmesan cheese.
Sprinkle in salt and pepper to taste.
I sprinkle top with more Parmesan cheese.
Bake uncovered in a 350-degree oven until bubbly and lightly browned,
approximately 30 minutes.
