White Cake Tom & Kari

Laurie & Steve's "Butter Frosting" is great on this cake! For cupcakes, fill cupcake papers 1/2 full, and bake in 350-degree oven for 18-23 minutes.

2 & 1/2 cups all-purpose flour
2 cups sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 & 1/3 cups buttermilk
1/2 cup butter or margarine
1 teaspoon vanilla extract
4 egg whites

Preheat oven to 350 degrees.
In a bowl, combine flour, sugar, baking powder, baking soda and salt. Add buttermilk, butter or margarine and vanilla. Beat with an electric mixer on low speed for 30 seconds, scraping bowl. Beat on medium-high speed for 2 minutes, scraping bowl occasionally. Add egg whites and beat for 2 minutes more, scraping bowl.

Pour into 2 greased and floured 9-inch round baking pans. Bake in a 350-degree oven for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on wire racks for 10 minutes. Loosen sides. Remove from pans. Cool thoroughly on wire racks.
