Turkey Tetrazzini Mom & Dad

If I have no pimento, I chop a red bell pepper and cook with onions and mushrooms. This is a very easy dinner!

2 tablespoons butter or margarine
1 cup sliced mushrooms
1 small onion, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup water or milk
2 tablespoons dry sherry (optional)
1/4 cup chopped pimento
2 tablespoons fresh parsley or 1 teaspoon dried parsley
1/2 cup grated Parmesan cheese
2 cups cubed, cooked turkey or chicken
1/2 pound spaghetti or linguine, or whatever pasta you like

In 2-quart saucepan, cook onions and mushrooms until tender. Stir in the soups, water or milk, and heat through. Stir in the cooked turkey, pimento, parsley and 1/4 cup Parmesan cheese. Cook spaghetti, drain. Serve spaghetti with turkey tetrazzini and sprinkle rest of Parmesan cheese on top.
