Scalloped Potatoes Mom & Dad|
1 cup thinly sliced onions
4 tablespoons butter or margarine, divided
3 tablespoons flour
1 & 3/4 cup milk, scalded
1 & 1/4 pounds potatoes
3/4 cup grated sharp Cheddar cheese
1/4 cup dry bread crumbs
Cook onions in 1 tablespoon butter or margarine until soft.
In saucepan melt remaining butter or margarine, whisk in flour and cook for
2 minutes over low heat.
Add milk in a stream, whisking for 1 minute.
Add salt and pepper to taste.
Peel potatoes, slice to 1/8- inch thickness.
Spread 1/3 of sauce on bottom of casserole dish, then a layer of potatoes,
onions, cheese- layer again.
Sprinkle bread crumbs, cover with foil.
Bake in a 400 degree oven for 20 minutes, remove foil and bake 35 minutes
more or until tender.
