Potato-Celery SoupNoreen & Marion|
This was a favorite recipe of our friend Grace, who lived to be 103!
It's got to be good for you!
6 medium potatoes, peeled and cut into 1/2-inch cubes
1 cup diced celery
1/2 cup chopped onion
2 cups water
3 chicken bouillon cubes
Salt to taste
Dash of pepper
2 & 1/2 cups milk
5 tablespoons butter
Chopped parsley (optional)
Combine potatoes, celery, onion, water, bouillon cubes, salt and pepper in
saucepan; cook over medium heat until vegetables are tender, about 15 minutes.
(Most of the liquid will be absorbed.)
Add milk and butter; heat thoroughly.
Serve immediately or pour into preheated vacuum bottles.
Garnish with chopped parsley, if desired.
