Peanut-Tofu SauceNoreen & Marion

1 or 2 garlic cloves to taste, minced or put through a press
1 tablespoon chopped shallot or scallion
1/4 cup unsweetened peanut butter
5 ounces silken tofu
1 teaspoon Lan Chi Chilli Paste with soybean or 1 Serrano chile, minced
In a food processor or blender, puree all the ingredients with enough water to loosen the mixture. Taste for salt and season as needed.
Makes about 1 cup
