No Peekie Roast Beefie Tom & Kari

Standing aged prime rib roast - well marbleized
Salt and freshly ground pepper
Parsley sprigs for garnish

Allow the rib roast to stand at room temperature for 1 hour.
Preheat the oven to 375 degrees.
Season the meat and place in a shallow roasting pan.
Do not cover or add water.
Cook in oven just 1 hour. Turn off the heat, but DO NOT open the oven door at any time until ready to serve.
Regardless of the length of time the roast has been in the oven, 30 to 40 minutes before serving turn the oven back on to 325 degrees and finish cooking. Remove to a serving platter and garnish with parsley. The meat will be very brown and crisp on the outside, beautifully pink all the way through - medium rare and very juicy.
