Minestrone Mom & Dad

2 tablespoons olive oil
1 onion, chopped
3 cloves garlic
2 medium carrots, chopped
2 celery stalks, chopped
2 potatoes, cubed
1 28 ounce can tomatoes
1 cup chopped cabbage
1/2 pound Italian-style green beans
1 small zucchini, chopped
Black pepper, to taste
8 cups water
1 cup kidney beans
1 cup small pasta shells, cooked
1 tablespoon dried basil
Parmesan cheese

Heat oil in large pot. Add onion, 2 cloves minced garlic, carrots and celery. Saute until the onion is transparent.

Add potatoes, tomatoes, cabbage, green beans, zucchini, black pepper and water.
Simmer for 30 minutes.

Add kidney beans and cooked pasta. Add more water if soup is too thick.

In blender, blend basil, 1 clove garlic, and 1 cup of the soup. Return to the pot and mix well.

Garnish with Parmesan cheese, if desired.
