Lithuanian Potato Bake Mom & Dad|
We had this at home when I was growing up. Cut into squares and serve with
any fish, baked meat loaf, etc. My mom also grated the potatoes last since
they tend to darken if standing.
2 & 1/2 pounds potatoes
2 eggs, beaten
1/2 pound bacon
salt and pepper
1 medium onion, chopped
1/2 cup milk
1 cup flour
Grate potatoes, do not drain.
Saute onions until brown.
Fry bacon until crisp, drain.
Combine potatoes, eggs, milk, flour and salt and pepper. Mix well.
Add onion, crumbled bacon and 2 tablespoons bacon drippings.
Grease a 9x9-inch baking dish; bake at 375 degrees for 1 hour or until brown.
