Linda's New Potato Salad Elaine & Craig, although they got it from Mary!|
1 pound new red potatoes
1/4 pound Canadian bacon
1/4 cup chopped red onion
1/4 cup finely chopped green onions
1/4 cup red wine vinegar
2 tablespoons olive oil
1/2 cup fresh parsley
Salt and pepper to taste
Wash, quarter and drop potatoes into cold, salted water. Boil 8-10 minutes.
Chop Canadian bacon and saute for a few minutes; remove and saute onions
for about 5 minutes.
Mix potatoes, vinegar, oil and bacon.
Add salt and pepper, onion and parsley.
