Hollandaise Sauce     Paul & Paula
4 tablespoons butter, divided
2 tablespoons flour
1/4 teaspoon salt
dash of pepper
1 cup milk
2 egg yolks
2 dessert spoons of lemon juice
Melt 2 tablespoons butter. Add flour, salt and pepper. Cook until bubbly.
Gradually add the milk. Cook for 2-3 minutes, stirring continually until thickened.
Beat the egg yolks together and add a little bit of the hot sauce to them.
Then add this egg mixture back into the sauce.
Cook gently for 2 minutes. Do not boil the sauce after adding add yolks.
Add the remaining butter. Stir until melted. Lastly, add lemon juice.
