Chicken Marbella from the Silver Palate Laurie & Steve

The recipe below serves 4. This can easily be doubled to serve 8.

4 boneless, skinless chicken breasts
1/4 head garlic
1 tablespoon dried oregano
1/8 cup red wine vinegar
1/8 cup olive oil
1/4 cup pitted prunes
1/8 cup pitted green olives
1/8 cup capers with bit of juice
2 bay leaves
Salt and pepper

Marinate overnight.

Arrange in single layer. Sprinkle with:
1/4 cup brown sugar
1/4 cup white wine

Bake in a 350-degree oven for 50 minutes to 1 hour.
To serve, sprinkle with 1 tablespoon Italian parsley or cilantro.
