Black Bean Salad|
2 15-ounce cans black beans, rinsed and drained
3 ears fresh cooked corn, kernels cut off the cob
1 red bell pepper, diced
1 tomato, diced
1 clove garlic, minced
1/2 small onion (or less), chopped
1 lime, zest and juice
pinch of salt
1/2 cup fresh cilantro, chopped
1 avocado, chopped
1. Combine onion, garlic, lime juice & zest in large bowl, let the flavors blend while you dice the rest of the ingredients, boil the corn, etc.
2. Add in all other ingredients except the avocado and mix well. Cover and chill for a few hours or until ready to serve. Add chopped avocado and mix gently just before serving.
Notes: Definitely play around with proportions to your tastes - I don't think I've ever had two batches quite the same! This makes quite a big batch (I usually halve it), but it will disappear quickly!
