Truly the Best Cream Cheese Frosting   Tom & Kari
Since Mary didn't include a recipe for the cream cheese frosting that she
recommends for her carrot cake, I will include mine!
2 3-ounce packages cream cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla
4 & 1/2 to 4 & 3/4 cups sifted powdered sugar
In a bowl beat together cream cheese, butter and vanilla until light and
fluffy. Gradually add 2 cups powdered sugar, beating well. Gradually beat
in enough remaining powdered sugar to make frosting of spreading consistency.
Cover cake; store in refrigerator.
