1 can refried beans or refried beans with sausage
2 California avocados, peeled and pitted
1 8-ounce sour cream
1 8-ounce jar picante sauce or salsa
1 cup finely shredded lettuce
1 large tomato, cored, seeded, and finely chopped
Several sliced black olives
1 cup shredded Cheddar cheese
As many jalapenos as you can stand
In a small bowl, mix refried beans with a few tablespoons picante or salsa to
Spread refried beans on bottom of glass pie plate, or other deep dish.
(Do not use metal pan.)
In another small bowl, mash the avocado with 1/4 cup sour cream, a few
tablespoons picante or salsa, and a teaspoon or two of lemon juice (keeps
the avocado from turning brown).
Spread on top of refried bean mixture.
Glob or spread sour cream on top of avocado mixture.
Sprinkle lettuce, tomatoes, black olives, cheddar cheese, and jalapeno
peppers, in roughly that order.
Drizzle picante or salsa all over the top, as much as desired.
Forgot an ingredient? No big deal.
Don't like an ingredient? Leave it out.
